Fun food for sick friends! (like all those F's)

One of my faves Ami got kidney stones this week. I offered to keep her adorable twins from the Congo but she had to pay regardless so that didnt work. I offered to make her an all organic meal. She is so like me, that she said no....that she had a pizza coupon.

So I proceeded to make the meal and just deliver it. When I had my surgery, it was so difficult to take help from friends. So, that really made me realize that sometimes you just need to do it.

It was the BEST meal I've made in a long time.

Organic baked chicken wrapped in bacon

Two lbs of organic chicken
Cover 9 X 13 pain with olive oil or coconut oil
Wrap nitrate free bacon around the chicken
Add favorite seasonings (I used sea salt and Emerils southwest)
I ran out of bacon for the last three so I did below:
Wrapped in pumpkin, safflower, almond, and cranberries

Green bean casserole

I steamed the beans with bacon
Then I poured them in a pan and mixed with cream of mushroom
I baked both of the recipes for 45 minutes on 400

Cinnamon Squash

I heated squash and added cinnamon

*All of this took NO time, its all bad carb free, full of muscle protein repair. I think I made it up but I've probably seen it somewhere.

And last but not least, it was the tot's day for snack day. Had to do it up organic for him as well,

Well I am here to tell you that you can! I am doing it now. After 28 weeks off in one year due to injury, I packed on some pounds. I started out with the AdvoCare cleanse because it is awesome, full of nutrients, detoxes all the bad junk out, and is a great kick-start.

Since the cleanse is over for me, I am still eating this way (with the exception of the weekend binge of about six pieces of cake, Sonic, etc-it was the tot's bday)-post later on that. So.much.fun. We had a rock star party and adults and tots sang karaoke and rock band. It was epic.

Now I am not following Paleo, but I do enjoy their recipes. So without further ado, the best burger I have ever had. For.real.

 Ingredients:
Organic burger (1lb)
4 organic eggs
Red onion
Fresh organic tomato
Nitrate free bacon
Organic spinach

Directions:
Mix burger meat with 4 eggs and whatever spices you desire
Cook bacon 4 minutes so you can wrap around beef
Add coconut oil on tray to broil
Cook 20 minutes on each side
When done, place spinach on bottom
Cut up red onion and circle on top
Add slices of tomato on top
Add spinach on top

Who is ready for football, chilly morning runs and pumpkin lattes?

I know I am!! I have been enjoying the temps and for the first time in my life I have been enjoying football all covered up in my afgan. Guess I am getting old.

The other day my dear friend Summer invited me over for a baking day! It seriously was so fun. It was just a few hours but it felt so cozy, warm and just friends being together. Nicole came as well and I am loving getting to know her. The tot had a blast playing with their little ones. It was PERFECT!

I made Paleo pumpkin muffins and Summer made deliciousl pumpkin drop cookies with chocolate morsels in them.

I finally broke down and put cinammon and stevia on my muffins. Added some taste. But they are SO healthy!!

So without further ado, here is what and how we made our fall treats.

Paleo almond butter pumpkin spice muffins: Healthy and all whole foods in ingredients.

  • 1½ cups almond flour
  • 3/4 cup  canned pumpkin (or cook and puree pumpkin yourself)
  • 3 large eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp  ground cinnamon
  • 1½ tsp pumpkin pie spice
  • 1/8 tsp sea salt
  • 1/4 cup raw honey (optional)
  • 2 tsp almond butter
  • 1 Tbs sliced almonds
Instructions
  1. Preheat oven to 350℉.
  2. Coat 6 muffin tins with coconut oil (or use paper muffin cups and add 1/2 tsp melted coconut oil to batter).
  3. Mix all ingredients and pour evenly into tins.
  4. Bake for 25 minutes on the middle rack.
  5. Sprinkle almonds on top immediately after taking them out of the oven


Summer's drop cookies:
  • 2 1/4 cups all-purpose flour
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter or margarine, softened
  • 1 cup granulated sugar
  • 1 (15 ounce) can LIBBY'S® 100% Pure Pumpkin
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 (12 ounce) packages NESTLE® TOLL HOUSE® Semi-Sweet Chocolate Morsels
  • 1 cup chopped walnuts
  •   Vanilla Glaze
  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract
Directions
  1. PREHEAT oven to 350 degrees F. Generously grease a baking sheet; set aside.
  2. COMBINE flour, pumpkin pie spice, baking powder, baking soda and salt in a medium bowl. Beat butter and granulated sugar in large mixer bowl until creamy. Beat in pumpkin, eggs and vanilla extract. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto prepared baking sheets.
  3. BAKE for 15 to 20 minutes or until edges are lightly browned. Cool on baking sheets for 2 minutes; remove to wire rack to cool completely. Drizzle or spread with Vanilla Glaze.
FOR VANILLA GLAZE
COMBINE 1 cup powdered sugar, 1 to 1 1/2 tablespoons milk and 1/2 teaspoon vanilla extract in small bowl; mix well.

Baked eggs wrapped in bacon

Good morning Sowers! I hope you are doing well and surviving the rain or enjoying the chilly temps depending on where you live. With a dreary and chilly day, I thought I would share a new recipe I made. Make sure you come back for my pumpkin, safflower seeds and almond crusted chicken marinated in balsamic vinegar  mixed with olive oil.

Baked eggs wrapped in bacon atop a fresh organic tomato slice:
4-6 slices of nitrate free bacon
1 fresh organic tomato
4 organic, free range brown eggs
Coconut oil or some sort of spray
Muffin tin

Directions:

Coat muffin tin with coconut oil
Fry bacon for about 4 minutes
Pour bacon "juice" in bottom of tin
Slice tomato slices
Add to bottom of tin
Wrap bacon around the tin
Crack egg and put in center
Add remaining "juice" from bacom
Bake on 350 for about 30 minutes

Enjoy!

Let's go corn hole crazy

Come on, who doesn't like to sit around and pick corn out of their teeth on Labor Day?

Okay admittedly I don't do that but I always picture everyone else doing that.

In honor of your lounging around today, I am going to do a quick, food post of some of my not so healthy and healthy favorites that are picnic friendly.

We aren't doing  much today because the hubs worked all weekend so this will be our first full day together. We wanted to cuddle up on this chilly day and just enjoy everyone.

Without further ado, here are some simple, yummy recipes for the day.

Karin's spicy buffalo chicken dip
1 lb organic chicken breasts shredded
1 bottle of ranch dressing (ah yea its the Southern girl in me)
1 bag of four cheese mexican shredded cheese
1/2 cup or to taste Pete's hot wing sauce
2 8 oz reduced fat cream cheese
1 bag of baked tortilla chips

Directions:
Shred the chicken and mix it with the above ingredients
Put in a 13 X 9 pan
Cook on 350 for about an hour
(I told you it was easy-healthy maybe not but oh so good)

Another fave is Rachel's stolen guacamole dip. (well all the unhealthy ones are from her; what can I say, that is what sister's do; we steal)

Guacamole dip:

2 avocados
1 diced tomato
1/2 diced big red onion
Guacamole seasoning package mix

Directions:

Smash (yea I just said smash)
Snooks won't mind
Dice your tomato and onion and add to mix
Mix in the seasoning last
Let it sit in the fridge for a while for the flavors to settle
Enjoy with regular or baked chips

Karin's favorite nachos

One bag of Rice chips
1 can of organic black beans
To taste jalapenos
To taste shredded mexican cheese
Organic salsa to taste
1 cup of organic corn
To taste my lovely guac

Directions:

Spray a sheet or use coconut oil to later it up
Put down rice chips
Add all other ingredients
Cook on 400 until heated through and yummy cheesy meltiness is making your stomach growl

Karin's Pizza Mia Mia!

1 package of Namaste gluten free pizza mix
Mozzarella
Goat cheese or Feta cheese
Tomatoes
1/2 jar of organic tomato sauce
Few jalepenos
Pesto (to line the pizza crust)
Red onion
Olives
Sweet red peppers
Sundried tomatoes to top it off

Directions:

For crust, follow directions on Namaste box
Add your tomato sauce and pesto to line the pizza
                                                                                                      Then add all of your crazy toppings and follow directions on box

1/4 bunch of organic kale
Feta or goat cheese
Red onion to taste
Tomato
Dried cranberries
    Walnuts
               I think you can figure out the directions braniac

What I am actually eating these days:

Karin's happy eggs and bacon-real exciting right-hey it's happy

Cook organic brown eggs on one side on medium low until yolk is mostly done
Fry up nitrate free bacon
Make a smiley face
  The end
